Rich beef stir fry

 I have to admit that I have never been a big fan of red meat, however this dish encouraged me to try it more often as it really is tasty! The marinade is made using ingredients that you are likely to have in your kitchen cupboard and you can add as much or as little chilli as you like depending on personal preference. I had never thought of putting cherry tomatoes in a stir fry before but they add a nice sweet flavour.

Serves 2

Ingredients
2 tbsp vegetable or sesame oil
400g stir fry beef strips
3 tbsp soy sauce
2 tbsp balsamic vinegar
1 tbsp Worcestershire sauce

1 red chilli
1 medium red pepper
1 small red onion
1 small courgette

6 cherry tomatoes
handful baby spinach
2 packs Udon noodles (or any other type of noodle)

1.Finely chop the red chilli then add it to a bowl with the soy sauce, balsamic vinegar and Worcestershire sauce. Add the beef strips to the mixture and leave to marinade for at least 30 mins or longer.

2. Meanwhile chop the onion finely, the courgette and pepper into strips and the cherry tomatoes in half.

3. Heat the oil in a wok or a large frying pan. Add the onion and allow to soften, then add the pepper and courgette and fry until soft. When they are nearly done, add the beef with the marinade and fry for a few minutes (according to your own preference).

4. Add the noodles along with the cherry tomatoes and baby spinach in the last few minutes.
